If you’re lucky enough to be in Brighton on a sunny summer weekend, such as the glorious one we’ve just had, I heartily recommend you seek out Jack and Linda Mills on the seafront. They are fish smokers by trade, but when he’s not making ‘Brighton smokie’ kippers, Jack mans his grill and fries fresh mackerel, caught and filleted that morning. They’re a scrumptious lunchtime snack in a bread roll – try them with a dash of lemon juice or a smear of mustard.

    Delicous stuff.

    Mackerel is probably my favourite fish anyway but having freshly caught mackerel on the beach is truly a treat.

    Remind me to pass on Jessica’s mackerel masala recipe sometime.
